Cooked over oak and embers
Everything on the menu touches the fire. We split local oak each morning and let it burn down to coals by late afternoon. The grate has three heights, so a leek and a whole fish each get the heat they need.
By day the same room is a café. Coffee comes from a small roaster nearby, croissants go in as the bread comes out, and the hearth stays low and warm for eggs and toast.
Lunch ends at 2:00 pm and dinner starts at 5:30. In between, we rake the coals.
